Instructions:

  1. Prepare the Avocado:

    • Cut the avocado in half, remove the pit, and scoop out the flesh into a bowl.
    • Mash the avocado with a fork and season with salt, pepper, and a squeeze of lemon juice.
  2. Toast the Bread:

    • Toast the slices of bread until they are golden brown.
  3. Poach the Eggs:

    • Fill a saucepan with water and bring it to a gentle simmer.
    • Crack one egg into a small bowl.
    • Create a gentle whirlpool in the water using a spoon, then carefully slide the egg into the center of the whirlpool.
